INTRODUCING THE ISLE OF RAASAY DISTILLERY

The Isle of Raasay is nestled between Skye and the mainland, a short 25 minute ferry journey from Sconser on the Isle of Skye. Home to just 161 people, it seemed an unusual location to build a Scotch whisky distillery due to its remote location. Co Founders Alasdair Day and Bill Dobbie chose the unique island location to recreate a lost spirit style of Hebridean single malt. It is the location; an island off an island, with complex geology, water, and island climate with what we claim to be ‘the best views from any distillery in Scotland’, that makes Raasay ideal for our innovative distillery. Founded in 2015 with production starting in 2017, 2020 saw the release of the first legal single malt from the Isle of Raasay Distillery. In 2021, our signature style Isle of Raasay Single Malt was released representing our core distillery style: lightly peated balanced with rich dark fruit flavours.
As part of our unique six-part maturation, we produce peated and unpeated spirit at different times of the year and mature these two spirit types separately in three distinct varieties of oak casks – ex-Rye Whiskey casks, virgin Chinkapin oak casks, and ex-Bordeaux red wine casks. Once we have selected casks ready for bottling, we vat the six recipe casks together in varying proportions to develop the complexity, depth and elegance we are looking to achieve. It is then bottled as our Isle of Raasay Single Malt. This six cask maturation policy, known as our “Na Sia” recipe, provides us with six different styles of whisky from our single distillery, which when married together in varying proportions, produces a single malt with elegance, complexity and depth of character beyond its years. This is the first time an Isle of Raasay tasting has been done in Australia, and we are so privileged to have Ciara all the way from Scotland to present these whiskies to us
