Join us in another in-person tasting with Morris Whisky. This time round, we are very fortunate to not only have Master Distiller Darren Peck present to us, but we also have a very special guest joining us - Mr John McDougall. John McDougall was the lead consultant for Morris Whisky during the startup and continues to do so today for future liquid development.
Before Morris made whisky, they made wine. The Morris family winery was established in 1859 in Rutherglen (North Eastern Victoria) and remained with the family for six generations, until becoming part of Casella Family Brands in 2016. Rutherglen is internationally renowned for the quality of the fortified wines produced in the region, something which Morris excels at. Access to these world-class ex-fortified wine casks is just one of the keys to the success of Morris single malts.
Morris Distillery was built in 2016 with consultation from the late Dr Jim Swan and John McDougall. Although the distillery is new, it utilises a hybrid copper still (named Aurora) that was built in the 1930s and has resided in the winery since 1941. This still was joined by a sister still (Ella), also built in the 1930s, with a near identical design. Whisky is distilled on site from a wash made from 100% Australian malted barley. Maturation takes place in American and European oak casks sourced from the family's wineries, which are re-coopered on site, as well as barrels which have held Morris' fortified wines.
The final key to the success of Morris whisky is, of course, their Master Distiller, Darren Peck. It would be difficult to find a more qualified master distiller, with as long and as an eclectic CV as Darren. Over a career spanning decades, he has distilled spirits on every continent on Earth, with the exception of Antarctica.
