This is an awesome single cask bottling of a bourbon cask of Spring Bay single malt that was bottled for Whisky Lovers Australia. The whisky was matured for just under 3 years in a 100L ex-Heaven Hill bourbon cask.
Nose: vanilla cream biscuits, fresh citrus, bright and zesty, freshly sliced ginger
Palate: malty, green bananas, sweet custard, saw dust, lemon pound cake. A little bit punchy without the water. This takes water really well. With the addition of water, it remains fresh and citrusy with the flavours amplified. Amazing to see how clean and fruity the spirit produced here is. Sweet vanilla and custard, elegant, warming and rich, chewy. Long finish.
